Happy Tuesday Friends! If you've read my blog, even once, you know I'm a wee bit obsessed with Mexican food (AKA margaritas). Therefore anytime I come across a recipe for "healthy" Mexican I am ALL about it. So, say hello to my little friend...Chicken, bean and slaw tostadas!
Tostada Ingredients:
4 (6-inch) corn tortillas
cooking spray
1 C fat-free refried beans
2 C shredded skinless, boneless rotisserie chicken breast
2 T fresh lime juice
1/2 t ground cumin
2 ounces shredded jalapeno cheddar cheese (I used the Mexican blend cheese)
1/4 C salsa verde
Tostada Directions:
1. Preheat oven to 450 degrees.
2. Coat tortillas with cooking spray; place on a baking sheet. Bake at 450 degrees for 9 minutes
3. While tortillas bake, place refried beans in a medium-sized microwave-safe bowl; microwave at HIGH 45 seconds, stirring every 15 seconds.
4. Combine chicken, lime juice and cumin (I also added a dash of sea salt) in another medium-sized microwave - safe bowl; microwave at HIGH 1 minute, stirring every 20 seconds.
5. Top each tortilla with 1/4 C refried beans and about 1/2 C chicken mixture. Top each with about 2 T cheese. Bake tostadas at 450 degrees for 1 to 2 minutes or until cheese melts; serve immediately with salsa verde and radish & cilantro slaw (see below)
Slaw Ingredients:
3 C broccoli slaw
1/2 C chopped fresh cilantro
1 (6 oz) bag radishes, trimmed and grated
2 T fresh lime juice
1 T olive oil
1 T honey
1/2 t ground cumin
1/4 t salt
*optional: 1/8 - 1/4 C mayo
*optional: few dashes of hot sauce
Slaw Directions:
1. Combine first three ingredients in large bowl; toss well.
2. Combine lime juice and the rest of the ingredients in a small bowl; stir with a whisk. Pour dressing over slaw mixture, tossing gently to coat. Cover and chill until ready to serve. Place 1 C on top of tostadas as a garnish when ready.
* This recipe is Weight Watchers friendly at 9 points.

I'm so obsessed with my new breakfast creation that I had to share it with y'all; Nutella Berry Toast! Serve with a hot cup of coffee and you'll be in heaven!
Ingredients:
1 piece of bread (I prefer sourdough because of the low gluten)
1-2 T nutella
Berries
Directions:
Toast your bread. Schmear nutella on top of toast and then sprinkle with the berry of your choice.
