~ What up homies ~
I'm not even going to BS you today; we're jumping right in! I have to share this recipe with you. I originally found it on Foodie Crush, but edited it a bit to fit my personal taste. We had it for dinner last night and the hubby's exact response after finishing his sandwich was; "I loved every minute of that and didn't want it to end." HAHA
Ingredients:
6 tablespoons salted butter
4 teaspoons onion powder
2 teaspoon garlic powder
1 teaspoon kosher salt
2 teaspoon dried thyme
6 good bread (I used Ezekiel Sprouted Grain)
2 tablespoon sun dried tomato pesto
1 avocado, mashed
9 slices provolone cheese
Fresh basil leaves
1 teaspoon olive oil
Instructions:
- In a small bowl, combine the butter, onion powder, garlic powder, kosher salt, dried thyme and mash together.
- Spread onion garlic butter mix on one side of each slice of bread.
- Place a large non-stick pan on a burner over low and add the olive oil and a bit of the extra butter mixture. Add one piece of bread (butter side down) into the pan. Layer with 1-2 slices provolone, smashed avocado, sun-dried tomato pesto, cut up fresh basil, another 1 - 2 pieces provolone and the top piece of bread (butter side up). Cover pan with a lid. Cook for 3-4 minutes or until golden, checking in to see that bread is slowly cooking and doesn't get too brown.
- Flip sandwich to the other side and cook for 2-3 minutes or until bread is toasty golden and the cheese has melted. The second side will cook faster than the first so watch it carefully. Enjoy hot & gooey!
- Serves 2
