~ Top of Tuesday to you Lovies ~
I was so exhausted yesterday from the weekend that I felt like I had vertigo. I felt like I just rode the til-a-whirl at the fair, but worse because I didn't even get an elephant ear to go with it! BLAH! So I did something I rarely do...I took a nap with Wake...and it was glorious. Pre-nap I was ready to smile politely and throw the bird at Taste of Tuesday; dinner was going to be toast. Not as in "bye bye"...but literal toast from the toaster oven. However, post-nap I felt a million times better and you can thank your lucky stars for that because I made GNOCCHI!!!
My gnocchi mac n' cheese from a few months ago was such a huge hit that I found another Gnocchi recipe (from Kevin & Amanda's) that looked almost as good...and boy...were we right! Per usual Joe loved it and has asked for me to make it again next week. I couldn't believe how easy it was to cook too; you don't even have to boil the gnocchi. Other than cooking this bacon, this is a one pot meal. GENIUS! So, Let me introduce you to Creamy Pesto Gnocchi with Bacon & Parmesan!
1 cup chicken broth
1/4 cup basil pesto
1 tablespoon butter
1 (16 oz) package potato gnocchi
8 slices bacon, cooked and crumbled
1/4 cup heavy cream
shaved or shredded Parmesan, cheese (optional)
1. Add pesto to chicken broth and stir to combine.
2. Melt butter in a large skillet over medium heat. Add gnocchi in a single layer and cook for 5 minutes until toasted. Pour in the broth pesto mixture, add cooked bacon, and stir to combine.
3. When the sauce comes to a simmer, reduce heat to low, cover and cook for 5-7 minutes until the gnocchi are tender and the sauce is thickened. Pour in heavy cream and stir to combine. Serve warm with chicken or a salad and bread. Enjoy!
