OMG...I bought Lottie this bathing suit and matching headband the other day, but she's still a little too tiny to wear it AND slept (obviously from the pic) the whole time. How cute are they though!?!

On Sunday we had some friends over for brunch to meet Lottie; and yes, Joe was home by then. We hadn't seen them in so long that we jumped right into chatting, drinking & eating, and I completely forgot to take photos. I think I'm going to start a new trend...posting pics of food after it's been eaten/served because that is right around the time when I remember to photo stuff. Anyways, I made a modified version of this Crustless Brie, Vegetable and Egg Bake, some cinnamon rolls (from the store) and pineapple mimosas (they went down like water). You can see the original recipe for the egg bake by following the link above, but the modified version that I cooked is below.
CRUSTLESS BRIE, VEGETABLE AND EGG BAKE
INGREDIENTS:
5 C vegetables (I used zucchini, onion and tomatoes
1 T butter or olive oil
Breakfast Sausage
8 oz brie, rind removed and torn into small chunks
6 large eggs
10 egg whites
2 T milk
1 T Dijon mustard
salt and pepper to taste
DIRECTIONS:
1. Preheat the oven to 350 degrees. Spray a 2 qt casserole dish with nonstick cooking spray.
2. Heat a large skillet to medium, add butter or olive oil and sauce the veggies until somewhat soft. Sprinkle veggies onto the bottom of the casserole dish. Using same skillet you used to cook the veggies, add the breakfast sausage and cook until browned. Sprinkle sausage on top of the veggies in the casserole dish. Then, sprinkle the brie evenly over the top.
3. In a medium bowl, whisk together the eggs, milk, and mustard. Pour over the veggies in the dish. Sprinkle with salt and pepper.
4. Bake 45 - 55 minutes or until the egg is cooked through. Serve immediately.
After naptime we decided to head back up to the club for a little "Sunday Funday." My SIL met us again (she should be canonized for how much she loves and entertains Wake) and her and the hubby swam with Wake for a glorious hour or so. Of course...no Sunday Funday would be complete without poolside beers. We ended the night with pizza back at our house and Game of Thrones. Can we talk about Khaleesi!? She's such a badass.
Oh, and another awesome thing from this weekend is that Joe updated my Moon & Lola necklace and Alex & Ani bracelets with "L" charms for my new little Lottie. LOVE!! You can shop everything I'm wearing from Sunday below (suit is from Target last year...tagged one similar).
