Weekend Shenanigans; Mexican Food and Football

This weekend was much calmer than last weekend (see Little Man Couples Shower post); it was so relaxing and we had some great family time! Two things we LOVE in the Teichert household are Football and Mexican food, and this weekend had no shortage of either.  On Friday night Team Teichert went to dinner at our favorite Mexican restaurant. You know it's bad when you have a favorite seating section and waiter, and they know what you're going to order before even asking. My personal go-tos are the Steak Fajita Quesadillas and house margarita, frozen with salt.   For Joe, W, and I, it's a perfect way to end the week and start the weekend.  We laugh, relax, catch up on things from that day, etc...  It was lovely to have a family date night.  

On Saturday afternoon we went over to our friend's house to watch The Gators play Arkansas, and grill out. This season The Gators have been giving me indigestion, you never know how it could go, so I was very happy and relieved that we won. On a side note, Joe and I met during the Florida/Arkansas game 9 years ago this weekend...it really is amazing how time flies when you're having fun and in love!   

My favorite day this weekend was Sunday though! We all woke up and watched ESPN in the family room together over coffee and oatmeal; W had milk and bananas.  Then after W's morning nap & lunch, we all went on a run.  Remember, I'm "running down that dream" and day 1 of training is in the books for both of us ;-).  Plus, W loves to feel the wind in his hair and he usually sneaks in a 20+ min nap which makes everyone feel refreshed. Once we got back home I decided to get creative and make my own version of "healthy" nachos. Remember, we LOVE Mexican food and football so it seemed a no-brainer for the Sunday night games. They turned out great so I'm going to share the recipe with you here.  A lot of the ingredients I used can be found on this list: Prevention Magazines 100 cleanest packaged foods

HEALTHY NACHOS
Ingredients:
* 1 lb organic ground turkey breast (be sure to get turkey breast.  There is also just plain ground turkey, but that means it can come from any part of the turkey- yuck!)
* 1 tsp garlic powder
* 1 tsp cumin
* 1 tsp salt
* 1 tsp chili powder
* 1 tsp paprika
* 1/2 tsp oregano
* 1/2 cup chopped onions
* 2 bags of Food Should Taste Good, Sweet Potato, Tortilla Chips
* 1 can Eden Organic black beans
* 2 cups reduced fat organic Mexican cheese
* 1-2 packages Wholly Guacamole, Organic Guacamole. (I would usually just buy avocados to slice on top of the nachos, but they aren't in season so I bought this instead, you can do either)
* Muir Glen organic medium salsa
* optional - jalapeno, chopped tomatoes, cilantro

Preheat oven to 450 degrees.  Brown your ground turkey in a large skillet. When no longer pink add the dry seasonings and mix well. (I learned this taco seasoning as an alternative to the packaged seasoning you buy in the stores.  It is WAY healthier and eliminates all the extra sodium.) Drain and rinse the black beans and then add them, along with the chopped onions, to the turkey. Stir to combine.  Spread the chips out on a baking sheet and then cover them with 1/2 - 1 cup of cheese. On top of the cheese goes your turkey mixture. Then top the turkey with the rest of your cheese. *This is also when you'll add any extras like jalapeno and chopped tomato.  Bake in the oven for 10 mins or until cheese is melted.  Once out of the oven top with your choice of salsa, guacamole or avocado, cilantro, etc...

  1. Hi Morgan! Just stopping over from the Shenanigans link up and those nachos sound delish. I have to admit that I love me some nachos, but don't eat them often as they are normally pure grease! I'll have to try these. :)

  2. Mexican food is absolutely the way to my heart. ;) LOVE the family date night...tonight is "Moe Monday" at our house, so the hubs and I are off to eat our $5.55 burritos. those nachos...HOLY MOLY...sound AMAZING!!!!!

  3. Football and Mexican food? Now that’s the formula for a perfect weekend! Your Healthy Nachos must have been a hit. I think you should’ve posted a photo of it, so we could feast our eyes on it. But thanks for sharing anyway. Good day!
