Taste of Tuesday: Quinoa w/ Edamame, Parm & Eggs!

How are you doing on this glorious Tuesday!? Is this anyone's favorite day yet? Any day I get to eat food is my favorite!  This week's Taste of Tuesday is dedicated to breakfast for dinner...again! I found this recipe on These Peas are Hollow for breakfast but decided to change up the quantities a bit to make it a little more substantial.  I also love this recipe because it is healthy for you AND really good for toddlers.  Wake loves cheese & edamame so I just smashed the egg & quinoa in there and he hardly knew what he was eating; he just knew it tasted awesome!
So without further ado, here is my dinner version.


Quinoa with Edamame, Parmesan & Eggs!

Ingredients:
1 cup quinoa, cooked
1 bag frozen/shelled edamame, cooked
shaved parmigiano reggiano 
2-4 extra-large eggs
2 teaspoons olive oil, plus more for frying egg
salt and pepper to taste
1-2 avocado, peeled, pitted, and sliced

Directions:
In a bowl, mix together the quinoa and edamame, and toss with one teaspoon of olive oil and season to taste with salt and pepper. Heat a tablespoon or so of olive oil in a non-stick pan over medium-high heat. Fry the egg until whites are set, but yolk is still runny (this will make a nice little sauce for your quinoa). Season egg with salt and pepper.
Sprinkle the cheese over the quinoa and top with the hot fried egg. Serve with the sliced avocado, drizzled with a bit of olive oil and seasoned with salt and pepper.
