We're two days away from Thanksgiving and since I KNOW I will be ridiculously gluttonous (I'm looking at you stuffing, gravy & pecan pie) I wanted these few days leading up to the eating contest to be healthy. Last night I made some easy baked chicken and then this delicious oven roasted cauliflower with garlic and Parmesan from One Perfect Bite. The flavor is so rich and makes you think you are eating mac n' cheese, but because it's cauliflower it's actually pretty healthy; great trick for your brain.
Ingredients:
1 medium head cauliflower (about 2-1/4 pounds), trimmed and cut into florets
3 large cloves garlic, thinly sliced
1/4 cup olive oil
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons grated Parmesan cheese
Instructions:
Heat oven to 450 degrees. Combine cauliflower and garlic in a large bowl. Drizzle with olive oil, lemon juice, salt and pepper. Transfer, in a single layer, to a large rimmed baking sheet. Roast at 450 degrees F for about 25 minutes, stirring once. Sprinkle with cheese. Serve immediately.
Now because it is Thanksgiving week, I thought it only fair that I share with you my most favorite Thanksgiving recipe; Ina Garten's Sausage and Herb Stuffing. My sister in law made this 2 years ago and I bypassed everything else; just poured gravy over a plate of this stuffing and went to town. HEAVEN!
Ingredients:
16 C 1-inch bread cubes. white or sourdough. (1.5 LB loaf)
8 T unsalted butter (1 stick)
2 C medium-diced yellow onion (2 onions)
1 C medium-diced celery (2 stalks)
2 Granny Smith Apples, unpeeled, cored and large diced
2 T chopped parsley
1 T kosher salt
1 t ground pepper
3/4 lb sweet or spicy Italian sausage, casings removed
1 C chicken stock
1 C dried cranberries
Instructions:
Preheat over to 300 degrees. Place bread cubes in a single layer on a sheet pan and bake for 7 minutes. Raise the oven temp to 350 degrees. Remove the bread cubes to a very large bowl. Meanwhile, in a large saute pan, melt the butter and add the onions, celery, apples, parsley, salt and pepper. Saute over medium heat for 10 mins, until the vegetables are softened. Add to the bread cubes. In the same saute pan, cook the sausage over medium heat for about 10 mins, until browned and cooked through, breaking up the sausage with a fork while cooking. Add to the bread cubes and vegetables. Add the chicken stock and cranberries to the mixture, mix well, and pour into a 9 x 12 baking dish. Bake for 30 mins, until browned on top and hot in the middle. Serve warm.
