It's "Taste of Tuesday" time again, with Ashley and Jessica! This week is volume 2 of my favorite Christmas Cookies (If you missed Volume 1 from last week, check it out here). I remember my mother always making homemade toffee during Christmas; like, melt the butter & sugar with a candy thermometer, kind of toffee. Not only do I not have a candy thermometer, but I'm not sure I'd be brave enough to try it even if I did. So, I like to call this my Sandra Lee "Semi Homemade" toffee. I got this recipe from a previous student's mom one year for Christmas. So without further ado...
Chocolate Toffee Crunch
Ingredients:
40 saltine crackers
1 C butter
1 C brown sugar
1 1/4 C dark chocolate (you could also use semi-sweet chocolate if you don't like dark)
Directions:
Preheat oven to 400 degrees. Line a large cookie sheet with foil and spray foil with nonstick cooking spray. Line the foil covered sheet with saltine crackers. In a small saucepan, combine butter and brown sugar. Cook on medium heat until mixture comes to a boil. Stir and boil 2-3 minutes, until slightly thickened. Pour boiling mixture over crackers, and spread with a spatula. Place in oven for 5 minutes, then remove and sprinkle chocolate chips on top. Return to oven for 1 minute to melt chocolate chips. Remove from oven, and spread melted chocolate chips. Place in freezer for 10-15 minutes. Break into pieces.
