Taste of Tuesday: Avocado Grilled Cheese w/ Sun-Dried Tomato Pesto

I'm not even going to BS you today; we're jumping right in! I have to share this recipe with you.  I originally found it on Foodie Crush, but edited it a bit to fit my personal taste. We had it for dinner last night and the hubby's exact response after finishing his sandwich was; "I loved every minute of that and didn't want it to end."  HAHA


Ingredients:
6 tablespoons salted butter
4 teaspoons onion powder
2 teaspoon garlic powder
1 teaspoon kosher salt
2 teaspoon dried thyme
6 good bread (I used Ezekiel Sprouted Grain)
2 tablespoon sun dried tomato pesto
1 avocado, mashed
9 slices provolone cheese
Fresh basil leaves
1 teaspoon olive oil
Instructions:
  1. In a small bowl, combine the butter, onion powder, garlic powder, kosher salt, dried thyme and mash together.
  2. Spread onion garlic butter mix on one side of each slice of bread.
  3. Place a large non-stick pan on a burner over low and add the olive oil and a bit of the extra butter mixture. Add one piece of bread (butter side down) into the pan. Layer with 1-2 slices provolone, smashed avocado, sun-dried tomato pesto, cut up fresh basil, another 1 - 2 pieces provolone and the top piece of bread (butter side up). Cover pan with a lid. Cook for 3-4 minutes or until golden, checking in to see that bread is slowly cooking and doesn't get too brown.
  4. Flip sandwich to the other side and cook for 2-3 minutes or until bread is toasty golden and the cheese has melted. The second side will cook faster than the first so watch it carefully. Enjoy hot & gooey!
  5. Serves 2
