~ Happy Tuesday Lovies ~
Today's post might be one of my most favorite recent discoveries; pancake balls! How many times during the week (or weekend) have you craved pancakes but not had the time or wanted to deal with the process/clean-up? Enter the easiest and most awesome solution ever! I originally found this recipe on Kirbie Cravings but have since added/changed a few things to my liking. Check out all the different options below:
Original Pancake Ball:
Ingredients:
1/4 C Bisquik
1/8 C Milk
Directions:
In a microwave safe mug or ramekin, whisk Bisquick and milk with a small whisk for a few seconds. It's okay if there are some small lumps. Heat in microwave for about 1 minute. Let pancake cool slightly before dumping it out of the mug and serving with butter and/or syrup.
Fruity (and kid friendly) Pancake Ball:
Ingredients:
1/4 C Bisquik
1/8 C Milk
1/4 C fruit (I like raspberries and/or blueberries the best)
1-2 t Agave nectar or Syrup
In a microwave safe mug or ramekin, whisk Bisquick and milk with a small whisk for a few seconds. Add in fruit and agave or syrup and gently stir together. Heat in microwave for 1 minute. Let pancake cool slightly before dumping it out of the mug and serving.
*This is the best way to serve them to kids because the syrup is already incorporated and less messy. When I eat it this way I cut it in half, and add a little butter though ;-).
Healthy Pancake Ball:
Ingredients:
1/4 C Whole Wheat OR gluten free Pancake/Muffin Mix
1/8 C Almond or Coconut Milk
1/4 C fruit of choice
1-2 t Organic Agave nectar or Agave in the raw
Directions:
In a microwave safe mug or ramekin, whisk pancake mix and milk with a small whisk for a few seconds. Add in fruit and agave, and gently stir together. Heat in microwave for 90 secs to 2 minutes. (I would suggest checking the consistency after 90 seconds. Take out and shake cup; if it's still really jiggly return to microwave for 30 seconds) Let pancake cool slightly before dumping it out of the mug and serving.

ReplyDeleteNo way, this is soooo easy!! I love making pancakes but I'm so impatient when it takes forever to make them and you have to stand at the stove the whole time!
