~ Who's Hungry!? ~
It's Taste of Tuesday and I'm bringing you a ridiculously tasty (and indulgent) sandwich that is perfect for summer; Grilled Pimiento Cheese & Bacon Sandwiches. I made it on Sunday night while we were watching The Master's and it was AWESOME!
INGREDIENTS:
Miss Mattie's Southern Pimiento Cheese (or any store/restaurant bought pimiento cheese. I LOVE Zoe's Kitchen)
1/3 C butter, softened
16 sourdough slices
16 bacon slices, cooked
strawberry preserves
DIRECTIONS:
* Butter 1 side of each bread slice. Place bread slices, butter side down, on a hot griddle or in a large skillet over medium heat.
* Spread 1/2 cup pimiento cheese over each bread slice on griddle. Top each with 2 cooked bacon slices.
* Place remaining 8 bread slices, buttered side up, on bacon. Turn sandwiches, and cook 5 to 7 minutes or until golden brown. (Pimiento cheese should be slightly melted.) Serve with strawberry preserves.

Wow this sandwich looks amazing! I love pimento cheese and have made it from scratch before but didn't think to add bacon or jam/preserves to make a sandwich. Looks excellent!
